Dinner tonight: roast chicken, seasoned brown rice, brown sugar carrots and arugula, walnut and blue cheese salad.
The carrots were for Madison’s sake. Not that the rest of us hated them.
The salad comes from here where I left a rare comment saying um, I want that salad right now. I bought the arugula today with the idea we’d have it in a few days with another meal. Right as I put it in the cart I knew there’d be no waiting. I needed that salad asap.
It did not disappoint. Alice did it with balsamic and olive oil. I was out of balsamic (as was the store) so we used red wine vinegar. Very good but next time I will try the balsamic. I’m not a huge fan of that particular vinegar but I have a feeling it will be excellent here.
After dinner I was seen eating the salad remains from Jacob’s plate. He adores blue cheese so it’s weird there was any left. I’ve got a crapload more arugula so we’ll be seeing this sucker again later in the week. I know a lot of you are fearful of the blue cheese, but seriously, try it. This salad. You just crumble the bc up little teeny weeny if it makes you feel better.
I heart arugula, walnut and blue cheese salad. I heart it so much.

this week’s menu. And when I say this week I kind of mean for like a few days, randomly.
Tuesday
Lunch: whole wheat pancakes and bacon
Dinner: restaurant (we eat out every Tuesday night after swimming lessons
Wednesday
Lunch: lefotver soup (broccoli or lentil)
Dinner: uh, I go to an exercise class at dinner time so the kids eat something easy and Dan has a protein shake after lifting weights. I have something light when I get home. Not exactly gourmet.
Thrusday
Lunch: salad
Dinner: szechuan stir-fry (with extra red pepper flakes for me pls)*
*I know, that was on last week’s menu but if you recall, we ended up going out for dinner that night so it was bumped.
Friday
Lunch: avacado tuna salad for dan and raw veg and avacado dipping sauce for me and the kids. We will also have hard boiled eggs and cheeses for protein. We call this having a ‘cold plate’.
Dinner: bbq chicken, french cheese potatoes* and broccoli.
*I know, that was on last week’s menu too but we didn’t feel like having them so they too were bumped.
This week’s menu is, I grant you, not such a thrill. It is largely a repeat of alst week, I guess, in places. But I said I would post them and post them I shall.

Salad with cheese and garlic biscuits. Went over extremely well even though this is hardly a fascinating or difficult meal. I’ve done cheese biscuits before (who hasn’t?) but this time went a little simpler with the recipe. Instead of putting a bunch of spices and doing a butter/garlic salt topping I made my basic whole wheat biscuits and just added sharp cheddar and garlic powder. Dan had six. There is something about a biscuit that just makes my mouth water and these were damned good.
Tonight was supposed to be szechuan stir-fry with extra spicey szechuan but I forgot we were going out for dinner so that’s been bumped until Thursday. I’m not sure I can wait.

I tried out a new recipe tonight. Super fucking good and man alive easy. Seriously. EASY and SFG. I know you don’t like blue cheese but shut up and try this, you big baby.
blue cheese pasta
Three ingredients, ready in ten minutes. Come on, right? Kicks the ass of alfredo. KICKS IT IN THE ASS. Swear.
It’s French which is English for fancy.

Thursday:
lunch: (homemade) broccoli potato soup
dinner: blue cheese pasta
Friday:
going out, whoopie!
Saturday:
lunch: sammiches on fresh bread (because hello? it’s fresh bread, stupid)
dinner: bbq steak, cheese potatoes, corn (because Madison will eat corn)
Sunday:
lunch: salad and cheese biscuits (like at Red Lobster)
dinner: szechuan stirfry (with extra red pepper flakes in my szechuan please)
Monday:
lunch: blue caesar
dinner: crockpot lentil soup (seriously, again, sfg)
Jacob asked if we could eat the blue cheese pasta every day for the rest of our lives. It’s got a half cup of whole cream in it. I said no. But maybe once a month. And after we can lick the pot.
I’m doing menus again. We’ll see how long it lasts.

Popcorn cauliflower.
Honestly? You can call it rollercoaster popcorn water slide day at the beach with sugar on top cauliflower and dudes, it’s still just nasty cauliflower cooked in olive oil. No self respecting coherent child would fall for this nonsense.
Mine would throw it at the walls and have me excommunicated from mommyhood.
Rightfully so.

I haven’t been posting our weekly menus and for that I am sorry. More than that, I have not been creating weekly menus. For which I am even more the sorry. We’ve been winging it and winging it sucks. Back to the menus. A short week.
Thursday
Dinner: baked chicken, seasoned brown rice, corn on the cob
(we have a store here that has awesome corn on the cob even though it’s not currently in season)
Friday
Lunch: Sammiches on fresh multigrain panini buns
Dinner: Spaghetti Alla Caprese
Saturday
Lunch: Tuna and Bocconcini Bruschetta
Dinner: Fries and tofu hot dogs (Dan is going out for dinner so it’s just me and the kids)
Sunday
Lunch: Blue caesar (with chicken)
Dinner: Portobello Mushroom and Canadian Swiss Pizza
Sunday Dessert: frozen yogurt, fresh fruit and chocolate chip cookies OR lemon cream cake
